Caribbean Quinoa Salad
Ingredients:

1 Red Pepper
1 Large Onion
1 1/2 cups of Quinoa
2 cups chicken broth (there is a great organic kind at whole foods-yellow box)
1 can black beans
1 can kidney or lima beans
1 can diced tomatoes
1 tbsp basil
1 tbsp oregano
1/2 tsp chillis (I used premade but fresh)
3/4 tsp allspice
1/2 tsp hotsauce
salt and pepper to taste
squirt of lime juice to finished dish
Optional: Add Prawns

Directions:

1. Saute peppers and onions until softened and then add quinoa. Cook for 4 minutes, mixing constantly.
2. Add all of the remaining ingredients, bring to a boil and then turn on low. Cover with lid and cook for 20 minutes.
3. Add a squirt of lime juice.
